Simnel Cake
It's Easter but as I'm totally eschewing furry bunnies, chocolate eggs and papier mâché sepulchres at the moment, I've made a simple simnel cake. Preparation was a mere one and a quarter hours and cooking time just two and a half hours. But so worth it with the Kitchen Aid retrospectively whirring in the background, as I struggle with tape measure, scissors and baking parchment. Actually, I did have the Monteverdi vespers playing on the Ruark 4i, which helped enormously. It's a gloriously sunny day for eating cake. Such joy!
